I'm currently using Textmate for python, javascript, jquery, html, css.
Command line for mysql. GIT to manage revisions and branches, JIRA for ticket management.
There may be a more all encompassing app out there but this has worked well for me.

My favorite app for the past few years has been Textmate also.
Textmate + iTerm (or terminal) + a good source control manager like Git or SVN is all you really need.
Lots of developers are also into VIM - which is the same across all platforms (win, mac, linux) - but I never got into it for more than editing things on the server.
I'm of the mind you really don't need an IDE for python (or ruby/javascript/html which is what I primarily code)

I use Aptana for php/html/css. They appear to have Python support as well. I wouldn't consider writing Objective C in anything but XCode.

I use Smartgit for Version control. If you're a 'hard coder' though you'll probably use command line.

i Use Panic's Coda for code, css, ssh, and simple DB stuff. If i need more advance DB stuff i crack open Sequel Pro. Both Mac apps.
