Given the quality of the lenses i guessing your not a beginner, which for me would remove the GF3 from the equation as it lacks a few buttons and a manual control dial, its more point and shoot orientated.A GF1 would be better, i have one and its great, it has more manual dials and buttons than the GF2, plus its size would be more balanced with an M lens making the manual focusing a lot easier.
However the Olympus pens have in built stabilization, the Panasonic do not, so a pen would probably be a better choice depending on the lens length.

How does one go about focusing accurately without an optical viewfinder?

I have used GF1 with M lens before. I thought it was good but not good enough due to focusing via liveview. I have thought about using Olympus for it's stabilization but havent heard anything about using it with M too much.
What do you think about Sony NEX-7? It has electrical viewfinder built in but slightly bigger than NEX-5.

NEX has the bigger sensor, different crop factor, better low light. But again the NEX is more point and shoot orientated with few buttons and access to controls can be quite frustrating given its P&S style interface.
Also the E-p3 makes v v v little gains (if any) in IQ over the previous E-pl2 model. Its very expensive for what it is. But it does have a high quality touch screen and the fastest autofocus of any m43 camera (along with the GH2), but autofocus is of no importance to you.
E-pl2 might be the best bet. Manual control, in built image stabalisation, combined with the awesome high resolution attachable Electronic Viewfinder (VF2) you can get for the pen models.

Good point about E-PL2.
Maybe I will try out the NEX-7 when it comes and compare as I have heard that it has more manual control over NEX-5.

I have the NEX-5 and am super happy with most of the results I get. I end up grabbing it instead of my Nikon DSLR most of the time lately. The NEX-7 sounds pretty good too from what I've read

The nex 7 wont have in built image stabilization, but for all other features, its really in another league to the cameras you listed and its price will reflect that.
The new EVF on the NEX 7 is crazy good, whatdigitalcamera said the A77 (same evf as the nex 7) is the first evf they have used and its felt like an optical viewfinder.
Crazy good high iso, Sony sensors are among the best, even the NEX5 sensor is comparable to a canon 60D sensor (which is probably made by sony as they make loads of sensors), in fact its better than a 60d for everything except low light which it is fractionally worse in.

BUT sensor comparisons mean little without good lenses. NEX has a limited lens range, but using a leica lens negates this.
NEX 7 would be your best bet, only down side is the lack of stabilization.

i forgot to mention the new new cameras the nex 5n and the nex 7 have new sensors. the nex 5n has a 16 megapixel and the nex 7 has a 24mp! First look at high iso seems promising too -

nex 5n appears to be on par with the canon 5d mark II! although in the test they say the nex 5n looks better, but i'd say its too close to call.
