I had a huge problem once. But it involved being chased down the Las Vegas strip by a very fast black pimp on meth.

I've only had shitty experiences with hostels,
and I live here, so sorry can't help,

Been to all 3 but only stayed in 4 star hotels. They're actually not too expensive. Try finding a travel agent and they'll set you up in all 3 cities for a fair rate.

get a tent and camp.

Stay at the Plus hostel in florence. Nice new clean hostel walking distance from the train station and minutes from any sights.

And when in Florence, remember how to ask "Where the train station is?" in Italian. The buildings all look a like and you can't see the horizon. Haha, easy to get lost. Not that, I um... did or anything.

I've staid in hostels in all three. God knows if I can remember what they were called though.
Use hostelworld, worked well when I went travelling. The place we stayed in Venice was actually a hotel and still really cheap.

Stayed here a couple years ago in Venice:

I stayed at starlight hostel everytime I was in rome. Super cheap, and real close to the train station, so long as your not expecting a lot. I lived in Florence so I dont really know any hostels there, but plenty of good bars. And when I was in venice I just partied all night and slept on the train the next day. Sounds fun tho! Wish I was back there.
