The Rio has a great Seafood buffet. Probably the biggest buffet in Vegas. It's kind of off the strip though, near the Palms.

Spearamint Rhino has the best chicks, but if you go off the beaten path and hit Palamino Club they "work" for the dollar a little more.
Also, if you like seafood, check out the Rio seafood buffet. Or try the Brazilian Meat skewer place in the hotel with the tigers...can't remember the name.
