Yeah, I figured I was doing something incorrectly. This link proved to be pretty helpful for me.

Yes, you need to go to the Type menu, Special Characters, and there are various Page Number markers available for insertion into a type box.

No you can't.
When you insert a page number (automatically) you insert in the text frame the name (label) of the page. If you change the page position you also change its name and the text updates.

For some reason, it won't allow me to click "spreads." So it output in the ps file just the left side of the spread. argh.

my postscript file is all jacked up. None of my linked .ai files are translating well through distiller. All of the patterns and transparency's are completely disappearing...I cannot get it to output into "spreads" either. Anyone?

Why are you rearranging the page order for printer spreads? File > Print Booklet... does that for you.

yeah i_monk's spot on. It does it all for you as long as you have just the front cover as the first page and the back cover as the last page.
