instead of using the Italicized version of the font they just click the [ I ] icon (like in the previous example Word)

I don't think Impact has an italic (or an oblique).
I guess I'm old-school, that was a typesetting term from when I used to order type but it sounds pretty obvious to me.

So what is 'tracked'?
- adjusting the spacing between letters. The sample you gave us is tracked openly.Josev
