For a budget of about $3000, what would be your ideal home entertainment/AV setup?
Need some ideas.

I have a G5 and MBpro. But no PC. So I don't know if that helps with connectivity.

fuck all that sony home theatre crap (the TV + ps3 are coo) - your money is better spent elsewhere:
Invest in a denon or onkyo reciever - you wont regret it.
Next, depending on how much space you have find yourself some nice tower or bookshelf speakers for your front speakers. Infinity or klipsch make nice speakers.
For the rears you may want smaller satellites, again depending on space, but a nice set of bookshelf speakers will work just as well.
Subwoofer - look for something high-end like a velodyne or a klipsch - as a matter of fact anything klipsch is going to sound fantastic.
Don't waste your money on sony trash audio... you can get much better gear for the money IMO.

is a Mac Mini a bad idea for a HTPC?

d_rek is on the right track here. Go for 100% component and leave yourself room to upgrade to your specifications. Get a good receiver that will accommodate your components (enough HDMI inputs, optical/digital audio, etc...) and a nice set (same brand, ideally) of front speakers (Center and Fronts). Down the line you can add surround speakers (the rears aren't as important, imo).
I have a Sony ES receiver, Polk Audio CS series fronts/center and a Polk Audio PSW110 sub to fill in the lows. The sound is seamless , nearly true flat-response, and very impressive. I would recommend this for anyone looking to get into decent audio while remaining well under $3K. Good luck!

I've got the B&W 684 Theatre package, amazing sound. A Yamaha receiver that I'm planning on upgrading, but pumps out decent sound for what I do. All to a measly 19" RCA TV that's about 15 years old.

I'm still building my home theatre. =) I went with the speakers first so I can still listen to music in the house, and I don't watch a whole lot of TV.

I've since added a pair of Infinity Bookshelf's to the mix for my rears.
The audio is, simply put, fucking fantastic.- the bookshelfs are also Primus series from Infinityd_rek
