A slab (more often than not) is a sans serif with shoes on. Technically slabs are a kind of serif, but their designs usually have more in common with grotesque or geometric sans. A true serif has more in common with calligraphy (in widely varying degrees).

To add to gramme's comment.
Orginally slabs would fall in the category of Egyptiennes together with sans. Egyptienne, like Grotesque, suggests the 'primative' forms of the characters and were considered a 'lesser form'.
