Notes app for mac ?

What do you use for taking notes ?
Pen and paper seemed like the best solution, but my desk always gets crowded with all kind of sheets of paper. So maybe it's time I use one of those fancy notes app.
I remember i've seen some apps that have some cool features like embedding links to files in links.. etc etc.
Any of you use something like this ? Does it help ?

Yojimbo.. You can have lots of categories, labels, tags, encrypted notes, etc.....

"sticked" with evernote for now.

finding a few quirks with Evernote... Notes create on OSX are not editable on the iPhone... (Notes on OSX app use styled text even though I don't want it, and then iPhone app can't handle the styled text)

i dont know about opera on a mac, but its browsers notes function is pretty nice, its wha i use with my pc. either that or physical stickies for quickies
