While the whole hype of presenting posters this way on the web became ridiculous, it's not a bad idea... Photos usually work better for presenting print work on computer displays, than just spitting out a JPEG of it.
What are the best ways of showing off a poster on the web, now that the holding thing is taboo among designers?

As much as we designers hate this, I'm left wondering what the clients actually think. I mean, If the client loves it and uses your services who cares what other designers think? (are you stroking your own ego or running a business?)

I believe holding a poster with the designer including on the photo is a great example of "ego stroking" as you call it. Is a way to show the face that is usually unknown and connect it to the work.I have seen specific cases where the face was visible and the poster was not a poster, but a "letter size" page and because of the open shot needed to capture the designer's face, the actual work took a very small place in the composition..
