I know in regards to single malt scotch, no it was not watered down as mostly done these days. People drank their whisky at cask strength, undiluted and unfiltered. Scotch, 100 years back or further, was a bit cloudy in body and more robust on the tongue. This is why my favorite scotch is Aberlour a'bunadh, it's cask strength, non-chill filtered, and comes in an apothecary bottle. I got a different brand for Christmas this year and immediately regretted the purchase—nothing beats a'bunadh.

you can't truly hydrate yourself by drinking hard liquor, the toll exacted on one's liver and kidneys negates the hydration.
Beer and wine, however, have so much more water than anything else in them, that it is possible to become and stay hydrated by drinking those two exclusively. Not very healthy in the long run, but that's how people stayed alive during the Black Plague.
