Pumpkin soup.
Boil yourself a pumpkin, halloween ones work nicely for soup. Throw in a few garlic cloves and some carrots. Once it's all soft, drain the water put every thing in a blender and puree it. It will probably take a few loads with the bleder for an entire pumpkin. Once it's all pureed, throw it back in the pot and add butter, cream or 1/2+1/2, salt and pepper, and what ever other spice you like (I like bay leaves). This is 50,000 times better that the pumpkin soup at Trader Joes especially with a good piece of bread.
Last year I used half the pumpkin for pumpkin pies and the other half for soup (fresh pumpkin pie is so ridiculous I can't even describe). I'm definitely going to do this again around Thanksgiving.

P.S. If your doing pie, boil the pumpkin first, make the pie, then add the garlic, carrots etc.
