my suggestion:
grab the best designed email's that you get on your own email.
analize them, compare them and see what works what doesn't.I made one based on the dimensions from the nike+ email

I used to do Target's e-newsletters and 580px was the max width based on alot of research.
This is a safe width for Outlook, and other web based email clients too. The idea is that it's more and more common to have a "preview pane" style view, and 580px is the perfect fit. Email clients that don't use a preview pane, it doesn't really matter on...but 580px still looks superb.
