i've never felt like i could articulate this question well enough to ask it but
you know how, sometimes, in illustrator you'll get an anchor point that has two handles but when you pull them they are independent of one another? they affect the line only on the side they live.
i only get that option occasionally, and on accident. how can i do this on purpose?

using the tool that looks like this: < (but it’s icon is on a 45° angle) click and drag one of the anchor points – ta-da! (as my young son has taken to saying).

use the convert anchor tool - (the one that looks like a diagonal V)
or if you're using the Pen tool then just 'alt+click'

i hope this isn't some rudimentary function that will altogether expose my hack knowledge of everything design related.

Yep, alt-click or whatever equivalent is on Mac. I've taken to drawing everything that way by default once I figured it out.

Kind of, but you are forgiven.

the convert anchor tool, play with it. you can click and drag. when you use this tool they are separated. if you use the arrow tool they stay together.

How about, if you have two 'spline angling widgets' at, say, 90° to each other - is it my imagination, or is there a way to use the Control Anchor Point Tool to move BOTH 'spline angle widgets' at the same time, thereby maintaining the angle?

click just the main point and use the rotate tool (dialog box mode).

A splendid admission that I find myself asking just before I post any request here for help.
Your honestly makes us all more honest, and yes - unless you are a Mozart or Michael Phelps, everyone is in reality a bit of a hack.
