I wonder how a human factors degrees can be applied to graphic design. I would think it's too specialized with ever-changing methodologies.

I think the role is an evolution, really. Some places look for people who have traditional design experience as well as a solid grasp on UI principles. If you are a designer (traditionally speaking) who rocks UI, you're in a great position.

LOL - I'll give this a try:
In interviews, there's generally a line drawn between what constitutes an "artist" from a "designer".
"Real" designers will be able to show that they put the user first and foremost in mind when designing something because it's there to complete a task in the most efficient and appropriate manner.
If you can show both your understanding of your audience and what constitutes the various elements that make a really useful website beautiful*, that's generally a good start.
* I know it's in the eye of the beholder but you need to give a better reason for designing something other than you saw it on Design Charts and thought it looked cool. :-)

Step 1: Have a blog. All smart usability types have a blog where they talk about various theories and how much other sites suck.
Step 2: Come up with cool-looking charts to illustrate your ideas. Give your chart a fancy name and blog about it.
