Do you guys ask for a certain percentage up front when taking on freelance work? Say you quote a job out at $10k, Do you ask for a chunk before beginning?

50% deposit up front.

Ditto that. 50% at start of work, 50% upon completion.

1/3 start, 1/3 mid point (like after comps are approved), 1/3 completion.
This makes it so if they somehow get shady you have more than 50% in your pocket.
I used to do a bunch of mom and pop company sites a couple of years ago and when their budgets are in the 10k zone sometimes they tend to cut their losses if thier money situation changes throughout the couple of months you're working together and they start dicking around with final payment.
Also, never launch a thing or put anything on their server until it's been completely paid for. Period.

I never got this... most of the companies I work for cut checks 2 times a month, so how can you get paid at the beginning, middle and end of a project that is only lasting a week or week and a half?
Also, so you won't continue work until you physically receive payment?

1/2 up front. Bill hourly afterwards and deduct from the "deposit" you've taken. Bill every 2 weeks.
Don't launch / hand off final materials until the funds have cleared in your bank for the final payment.
