In there s shortcut in InDesign to remove all manual letterspacing/ kerning from all the text in a document, or is there a shortcut to reapply a Paragraph style (removing all manual setting)?
I have a 200 page document that was fully typeset, by me, and saved. Now all the setting has gone to shit and I have to redo it.

Well, depending on what Paragraph Styles you have already, you could change them so that Kerning was set to Auto (or Optical). If the doc has no styles at all, then you could change the default Paragraph Style so that Kerning is at Auto. Or you could Select All for the text and change the kerning. It all depends on how the doc is built...

I already have Para Styles set up but every paragraph still needs manual editing to make it look semi-decent. I did this for each and every paragraph (4 per spread for 200 pages), saved it, re-opened the next day and all the editing had gone. It's really fucking me off as it looks like I'll be pulling an all weekender :(

Not sure why your kerns would disappear after a save. That is both bizarre and unfortunate, sir, and I commend you for your dedication.
For paragraphs of copy I tend to stick to optical kerning for fonts without proper kern tables, or auto if designed well. I'll fix glaring kerning issues, but for the most part, I'll let it slide.
But then again, I suck.
