Was in a bar in Madrid a few years back, decorated kinda like a Thai beach hut, people sitting on cushions on the floor, shoes off. It was so friggin hot and they had the best mojito I have ever tasted. One poor bartender was crushing limes and ice all night.
Thats what I'd go for, in that bar, in the summer, the perfect mojito.

I'll second the Old Fashioned... place around here makes it with orange bitters, can't be beat on a hot day. A Bombay Sapphire and tonic is pure summer manna, as well.
