How would you quote this...

All right, I met with a potential big spender client on friday to discuss his project. He is opening a restaurant (upscale, very gourmet type) and wants me to develop the whole identity for it. I will be creating a logo naturally, but he also wants me to be in charge of banners, porcelain, silverware, menus, and everything that has to do with the place and could be 'decorated'.
Oh, his idea is to start a chain of restaurants like this one and take it to different cities.If he likes my concepts, the interior designer will design the whole place based on my idea.
How would you quote this project? Per hour or should I come up with a package price?
How much should I ask for? Taking in consideration that this could turn into a national chain?< his words...

i agree w/ above, but IME, working off a retainer is the best way to go about this.

well, friday was just an 'informal' meeting to let me know what the project is and what they want me to do. I have to meet with them this week on a more formal basis and discuss price and contract terms.
We pre-agreed to do it 30-30-40%.

I would approach it with the Identity package first and then work from there. You don't want to get yourself into a hellish project before you even touch a logo...
Gage it on a personal level after you finish that stuff and then pitch a package price for the rest.
I wouldn't do hourly but I would charge upscale of $10k if you do end up doing the complete package .

include a schedule of deliverables and have them agree on that along with the proposal. it will no doubt happen that you will be asked to design for some contingency you may or may not have thought of. probably the reason a retainer would be the best bet.

work out a percentage based price off the orriginal for each additional restaurant they open so that you get paid for every restaurant, not just the first one

It really comes down to time. figure out the hourly rate times how much time you think it will take. And make sure the agreement has a stipulation for excess hours and what not.
That way you can bid it project based, but the time is way off, you can recoup.It's tough for us to put a price on this, because you know all the details. But I think basic identity can start at around 2500 and go up...

I would do it on a job by job basis. This helps you and the client keep track of where they are money and project status wise.

Does 8,000 sound reasonable?
I believe the identity i am creating is strong enough to close the deal and transfer to any other product he has in mind.

Smokes =That sort of shit so you're not just presenting him with 'sticker shock' of 8k and no guts as to how you got the numbers.
Some giant ad companies I know of charge 10k for a brand alone. And that's for medium sized companies.

definately break it down, but all in for the identity package should be 8K-10K

Definitely break it down.
If the client bargains, you will be able to cut off less important parts of the job rather than reduce price - to the same financial effect. This way you don't change your price, only reduce/postpone the amount of work.
