I have some questions for the UI Designers here:
1) Are you expected to do business analysis to decide on the UIs contents down to the details needed to complete each task?
2) Are you expected to be a usability expert or do you only do more of the visual aspect?
3) Do you work on a wide variety of UIs and other designs or more long term projects.
4) Do you have a hard time adding work to your portfolio (due to long project times, confidentiality, etc)?
5) Does working on UI design fulfill you creatively?

being a UI designer might not sound highly creative so the constrains and limitations on functional interfaces is what drive my creativity (less is more): the basic rules of usability are not that complicated, so as long as you have a fair knowledge of it together with a solid study of the users of that particular site then you will easy know what to do! The type of projects can varie, from entire environments to small changes to make a navigation more functional or information more accesible, either way, yes it is difficult to build a portfolio cause often my involvement in the project is invisible.

Thanks for the info. I have been doing UI in some form for 6+ years. I am now working on a User Experience team doing the UI for a huge, probably 3+ year, project.
I am doing a lot of analysis for an extremely complicated business.
I am finding it difficult to add anything to my portfolio as this is such a long project, is confidential and has mostly involved only prototypes so far.
The only tradeoff is that I am getting a lot of experience in certain aspects of usability that I hadn't done formally before.
I would love to work on a wide range of visually appealing projects like these:

i do a fair bit of ui consulting, both from an interaction and visual design standpoint. i've been asked to join a few companies in permanent roles, but then you run into some of the problems you mentioned in your post. as a consultant, my role doesn't usually span more than a few months, at which point the internal team of a given company will take it from there. i provide a structure and visual style which they go on to implement in the actual product. the only real downside is the lack of control in the finished product, so more often than not, the designs are implemented in a not-so-optimal way.
