I go there almost every year since the late 90's.
Granada or Cordoba.
the two most beautiful cities in Andaluzia.
discover the spirit and beauty of the Nasrid dynasty, Al-Andaluz, the last Iberic islamic dinasty.

i took the train through on my way to morocco, it's absolutely beautiful, i could spend my whole life there picking olives...

You should rent a car to drive around the region and check Sierra Nevada. the small villages are beautiful also.
read Cervantes 'Don Quixote de La Mancha' to get in the mood.
beware: in the Summer the temperatures can be extremelly hot. I tought I was used to it in the south of Portugal, but nothing prepared me for Cordoba in August.

Such a beautiful area.
Spend some time in Seville and visit the Reales Alcazares... the Alhambra in Granada... drive through the mountains and make your way through Rhonda...

El Choro, & Ronda are pretty cool too..
A tip. if you're thinking of mountain biking round there in the middle of summer, before you set out estimate how much water you'll need - then triple it...

the mezquita de cordoba is one of the most spectacular buildings of that region, aside from the alhambra. don't miss it.
