A friend of mine wants an ecommerce site creating which I've said I would do for him - I've never really done ecommerce before but someone has recommended using paypal as a quick solution (my friend is strapped for cash) Any ideas anyone?

friend strapped for cash = paypal.
very easy to implement but not too feature rich.

it's pretty easy to implement the paypal ecommerce. They have step by step info on their site.

paypal's great, loads of options and features rich if you use IPN. they also have specific products/soltuions for ditributing downloads as well as simple buttons to integrate into sites that dont have/need carts

I guess sales tax is just for retail businesses.

if you're at all familiar with php you can do it easily with osCommerce.
if you're in the UK you might consider NoChex for payments - i found them much better than PayPal.. easier for customers too.

I've been looking for a simple paypal solution for a store selling downloadables. No cart necessary, there'll be no more than 5 products. I just want it to release/email files upon payment. Any ideas?..

I would suggest something like a BigCartel http://www.bigcartel.com/home
solution for your buddy. You can customize the design and let him handle the payment /inventory aspect. By paying a monthly fee ($5, $10, or $20/mo.) He'll most likely take his venture more seriously...see your helping him grow already.

IK've used paypal for shirts, www.harderthansatan.com but not for downloads...
