boiled egg?

Cooked a boiled egg yesterday, couldn't remember whether they sink or float when they're done?
Am I even on the right track?I do however know how to make perfect poached eggs for eggs benedict.

how long do i have to wait and how do i know when a egg is solid but the inside is still wet, i hate it boiled boiled where the inside yellow part becomes solid ball.

I remember salisae say set a pot of water to a boil. Then turn off your stove, and place the eggs in it. I never tried it before.

only bad eggs float. to peel the egg correctly, begin by cracking the blunt end as that's where the air bubble is.

For poached eggs, ensure you have plenty of vinegar in the water to keep the egg together. And don't place into boiling water, get it to the boil then reduce the heat when the bubbles stop gently crack your egg into the water.

right on kappa! that's exactly how I do it.
I've managed over the years to get the vinegar to water ratio perfect, so as the eggs have a nice twang to them but not completely ruined by the vinegar....still can't boil an egg though.
Oh and haven't figured out how to make Hollandaise from scratch either, any ideas?

hollandaise is a doddle. the trick is to keep whisking constantly and if it starts to break, take it off the bain marie for a while. if it properly breaks, chuck in a bit of ice water and it'll be fine.
