What resolution should a flash interface be created at these days? 800 x 600 or 1024 x 768 or other?

Depends who your target audience are. Still a lot of people using 800x600 though.

dont make full flash sites. id still say work for 800*600 even though the majority of browsers these days are 1024*780

however in complete contradiction to what i have just said - i love full flash rias.
regardless of that - i still dont like full screen flash.

You could always embed the flash content in the page at 100% width/height and make the interface scalable.
This way you can avoid full screen and still cater to a variety of resolutions.

i dont like full screen flash sites.
i prefer, and think flash is more suited to being another element within a web site rather than being the site itself.
however, i can show countless examples of full flash sites that i love.
