effects/ texture/ grain/ stippled
then modify transparency options to achieve overlapping colors.
but i always place my textures in AI as images from PS so what do i know.

I made a gradient, and went to effects, but the texture part is grayed out so I can't select it. Should I rasterize the gradient? If so, how do I do that?

does illustrator have a dissolve blend mode? can't check right now, but that would be another way.

change document color mode to RGB :)

I started a new document, and made it in rgb. It's the same for photoshop as well. Some filters only work in rgb mode.
