canon digital rebel with a bunch of lenses.
wanting the hassy H1-D
wanting the 20D.

Carty, which do you use most in your work? Do you develop them yourself?
I've been spending a fortune of paper alone lately. The results are worth it though.

Canon Elan 7E
I still shoot 100% film. I mostly shoot color slide film, so I really don't get into developing it myself.
Ironically just about all my output is digital now though. I scan all my keepers with a Nikon LS 5000ED. It's a good way to get started on a digital workflow.
With the Canon 5D coming out soon, i'm moving to digital by winter.

There's a mamiya large format digital coming out or already out for around 10 grand

Jevad.
I shoot everything in RAW format and then use Adobe CS2 to tweak the white balance to whatever you want afterwards.

Know nothing about your white balance question :-)
But your RAW comment: If you haven't shot RAW and learned to use a RAW editor is the only reason you'd listen to the RAW vs JPEG debate.
RAW kicks.
You might shoot JPEG and RAW and come out with the same shot, but you gain so much more control and flexibility with RAW.

Set manually, or sample whiteboard on site. Or use RAW.
I always use RAW for nightshots and underexpose it up to -2 to shorten the exp time.

I have 20D which i use for my commerical work, an SD500 canon powershot which is an amazing camera 7megapixel little camera and the oldies Nikon F3, Canon A-1, and love those with film. oh yeah 2 holgas, toy cameras.

Jevad - ok white balance is important, if you are using a flash and things are getting washed out, set the white balance to flash and close down on the f-stop. You can put it on auto, which does good.
Shoot RAW + JPEG (small)
Raw's are so versatile, lets say you shoot outside with a tungsten white balance, in canons software, you can change the white balance of the raw on the computer to fix mistakes like that. also you can push and pull stops, and do alot with a RAW. Jpegs are compressed already in the camera so you are stuck with what you shot. sorry so long, if you have more questions you can email me
