haven't been there yet (going in January), but my surfer-friends said Agadir was teh cool. While you at it, Essaouira seems to be a colorful beachtown as well.
Oh, and don't take the bus. Rent a car.

went there three years ago, just for a couple of days, visited Fez (or Fes?) which was very nice.
i travelled by train, it was surprisingly good
