far from a computer person, but I don't like one pagers, you forget how far up / down things are you need to reference. Things like wooster collective work ok but thats different. I used frames in mine which ive been told is very old fashioned but i dont care! it seems to work so far!

I like frames better than one page folios, depending on how the frames are used. Usually designers know how to use them in a neat way, without compromising the creativity.

I think that there is something to be said about hybrid sites, or the arrangement of a portfolio using one page ideas, but with added interactivity.
For starters, I think that all portfolio should be created using database (MySQL/PHP) with each entry having a date, client, keywords and category fields in addition to a short description and of course content. Even if you choose to put every last bit on one page, having this type of structure assures that the presentation can be changed quickly and easily at any time without loosing work.
Even within one page layouts, there can be multiple presentation. For instance, you can let the visitor view projects by type (web, print, branding, etc.) by date, by client or even search for certain keywords. The result set can use the clean simplicity of the one page layout to show results.
For a small body of work, often times a one page is the best option. If you have 10 or 11 projects than grouping them all together may make them look more solid. Of course when you start to grow in projects I think that the one page idea needs to be given more ways to arrange or find content.
If you don't already know, MySQL and PHP are widely available as part of web hosting packages, are free and very easy to learn and use. Once you begin to use them, you will find that the backend of any portfolio should be pretty similar. Then the front end can always be tailored or refit on the fly to change the front end.
