Indesign questions...

I'm designing my 1st catalogue and have a couple of Indesign questions for you fine folks. Here they are:
1. When laying out documents with several pages, do you lay them out as they need to be printed or how they will appear. ie. would you lay out a 2 page spread with page 2 and page 23, or would you lay it out with page 2 and 3 and then the prepress software sorts it out?
2. Is there a way to hide the bleed and any other objects outside of the artboard while working?

3. How about Align to page or artboard?

lay it out page 2 and 3 etc
Then when you supply the artwork turn your spreads off. That's how i do it anyway.

Basically, you'll probably get a few things wrong on your first few InDesign jobs. Be friendly with the printer and you'll work it out.

Press "w" key to switch between seeing the artboard and seeing a page preview
