What window do I bring up to mess around with the text I just typed?
This is so stupid. But I'm new with it.

I hop you're not talking about Object > Envelope Distort ... because in that case you could just as well do your layouts in Microsoft Word.

What's wrong with envelope distort? An interesting way to work with type in an envelope is to set the type with character and paragraph styles, which is new to Illustrator CS. Then, you can change the type with the styles, even if it's still in the envelope.
