What would you say the fonts that kind of define today? What do you see around you all the time in advertising, media, signs and so on?

HELVETICA
all-over-all. it's even used for musli-packages.

I remember reading once that Template Gothic was the font that defined the early/mid 90s... What would you say that the defining font now is?
I guess we take Helvetica as a definite...but anymore?

VAG, DIN, TheSans, Trade Gothic.

Yeh, DIN is everywhere.. That slightly squared look is very now. VAG seems to be appearing a lot - Nexus London over in the NTB is really really nice.

sans serif and square/pixel fonts in general

Pixel fonts and Clarendon.
And fonts that show panels or large squares that make upa pattern within the text. UPN uses a nice one in the promos.
