a guy at Rockwell Collins ( http://www.rockwellcollins.com/ ) emailed this back to me.
"It's not the shadow that gets reflected off of something, it is sunlight not reaching something that it would normally reach that causes a shadow. In this case, sunlight normally reflects off of water particles in the air (poor man's reason why the sky is blue). The contrail blocks the light from the sun that would normally fall on these water particles in the air and a shadow is seen. "
