If you already have a slr with lenses, you should probably stick with the system. If you are a system virgin, then..
Nikon D70 - 6MP, very fast and accurate AF, plastic covered body (metal frame), good price.
Canon20D - 8MP, magnesium body, very fast shooting and AF, very good for night shots (almost noiseless ISO1600) costs about 150% of Nikon's price. Some people report AF accuracy problems but I can't tell.
Pentax *istDS - 6MP, SD cards (no CF support), smallest body (metal frame, plastic covered), biggest viewfinder in the class, support for AA batteries and tons of legacy lenses including old Karl Zeiss Jena ones your parents keep boxed in the attic. I guess it'd be the best choice if you want to experiment with photography (manual shots and stuff). Should also be the best for street photography, especially when paired with the new pancake lens.

I Haven't touched the new pentax camera yet though, they still haven't hit the stores here.
All 3 described cameras have excellent image quality.Or.. go for a Canon 1DS MK II if you have $ to spend ;)
