I agree with you to a certain degree. I think it would be fucking grand if all waiters made the same ammount of money every night. My girlfriend will make $40 sometimes and others she makes $250. But think about it like this: as a designer if a client keeps having you change stuff you have a change fee. When you ask a waiter to go get you this and go get you that...these are change fees man.

When I was a waiter it kind of made sense to me to think about it this way: They get paid their salary for the bare minimum; to take care of their uniforms, keep good heigene (sp? its late) and to show up. The tips are a bonus for all the other shit waiters have to put up with. And believe me there is a lot of shit that waiters have to do just to get through a shift. It really is a tough gig being a waiter. Now mind you I worked in a pretty high end restaurant...long story but two gentlemen spent 75 thousand dollars for dinner, lots of old old wine...and moth this might surprise you, but they tipped out 12k, luckilly I worked in a rstaurant that split all the tips so I walked with $800. Did I deserve it, hell no, but I don't think we're talking about that kind of restaurant. But regardless it really is a tough gig most of the time, you are usually working with pissed off chefs, managers in restaurants are mostly assholes and then you get customers like Gorbie who get their food spit on all shift long for acting out :P
