A client wouldn't pay me recently. He wanted the source files for the work I was doing for him and I refused to give them over. That's the first thing you can do. Problem there is he can always get some hack to mimic the stuff you've done so far. ( like say, if you put up some jpegs or pdf's for him to look at...)
I ended up calling my cousin who is an attorney. Most important thing is to save every email if you didn't do a contract. Don't only print them out but save them on your machine. Every one from when you were approached to when you were activated as his designer. They ARE admissible sometimes. (trust me, it works in kiddie-porn cases..)
My cousin sent him a letter from his law office basically summing up how much his bill would be including his fees. Dude payed up quick. It may have not held up in court but it is an option. Find friend who is a law office intern or a paralegal and try sending an email or letter.
