What are you talking about?
You can convert from different formats in and out of each other, you tend to lose quality when converting.
You probably can do this, as mentioned like a million times here, using Mac tools (sequencers) such as Pro Tools, Logic, etc. You might be even able to do it by converting to .wav and then importing into a soft synth such as the Propellerheads' Reason and then exporting out as MIDI (.mid). There are many ways to do it with a PC.
