This blackened mushroom burger with salsa and quac at taco loco in Laguna Beach ca convinced me to go vegetarian when I was a 14. I had to have this a few times a week. Potato tacos were also good. Chopped potato seasoned like meat and all the other expected toppings. Even meat eating friends won't miss it if you're making it for other people.
They also had really amazing vegan cookies and that's when I figured out tofu is a great substitute in baking. I started to experiment in the kitchen after that.
