I rebranded a 'top 5' law firm a couple of years ago. They already had a heraldic symbol as they are a very old company. We did lots of redrawing until they were happy.
Aside from that it was all about typography and imagery.
Typographically, we gave them a typeface that could be used to set very detailed reports/contracts etc, but would also work at larger scales and feel ownable. We also avoided standard stock/corporate imagery.
Research the competitors and be different, but with good reasoning.
