Just because they are not for profit, doesn't mean they haven't got money. It just means they aren't operating to make profit - and when they do, they'll put it back into whatever they are doing.
Work out the size of the organisation, find out what their budget is like, charge an appropriate and fair rate without ripping yourself off - pay your bills first, be a samaritan later.
