I'm a recent vegetarian (vegan is masochism)...
Lots of eggs, cheese, etc...
I run, bike & live a generally active lifestyle and the diet is an excellent extension of that, but you need to be aware of what you are (& more importantly what you are not) eating in order to maintain peak health & performance.
Their are so many meat alternatives today relative to 20-30 years ago so it is quite easy to do if you can give up your steaks, beef burgers and such; you truly rekindle a love of vegetables that you never thought possible...
- I've adopted virtually the same diet and plan and I feel much better. Occasional shrimp and fish, I have to do however********
- and totally, 30 year ago, no fucking way, I could have been, with today's immigrant class, Indian / Thai / Japanese********
- it also makes it much easier. Paneer / veggie stir fry, etc. all work well for me, as long as there's curry in it********
