    Depends on the logo, but I have done this in the past:

    1. Scan the logo in at as high a resolution as possible. Make that sucker very big (like 1, 200 or more dpi). It will look like shit, very blurry, etc.

    2. Bump up the contrast, etc. (assuming the logo is one color)

    3. Use the magic wand tool. select directly or outside of logo , invert selecton if needed.

    4. Open up your paths palette, make the selection a path. Play around a bit with settings to get rid of most of the rough edges.

    5. Export path to illustrator.

    6. In Illustrator, size down and clean it up a bit.

    This works for some things, but not for others. Either way, it could save you time from retracing the entire logo. All you have to do is add/subtract some points and clean up a few lines.
