would get a car, drive round to boulders, have a swim look at the smelly penquins, continue to cape point and see the baboons and ostriches, have a swim at dias beach, carry on round and go over chapmans peak, have lunch/dinner at chapmans peak hotel (famous for calamari) go have sundowners on clifton and then head into town. there is a bird park (monkeys too in houtbay but its pretty rundown, and one of the monkeys bit me in february)

another day Id head out to franschoek and spend the day and even night there drinking wine etc, its a beautiful area.

you could head up the west coast too for a day, darling is a cool little town 50min from CT and then head to yzerfontein beach which is good

table mountain is a must too

get up early and climb lions head, its an easy climb and watch the sun come up, or if you are there during full moon there are parties up there then.

depending on where you are from, you probably have better galleries/museums there but the nature side of CT is amazing so id suggest going that route

great food and wine in beautiful surroundings and friendly people
