Did the same kind of project last year, stripped the bike clean, spray painted it with at least 4 layers of base paint to finish it off with 3layers of matte black. Paint job looked perfect for exactly 2days, each minor bump to it rips of the paint instantly.
Only way to prevent this is to have the paint baked which you can't do yourself, so I'd recommend to get it done in your nearest paint shop (or "beschutte werkplaats"), should be around +-80eur.
It'll last way longer and it's what I'd do if I had to start over again.
