    "That is, say I open up a ZIP of an album and then I open those files to iTunes. Do the songs add/save to my library on my Dropbox folder, or do they add locally (meaning I have to update my iTunes playlist/folder on Dropbox all over again)?"

    Depends on your iTunes settings.

    Edit -> Preferences -> Advanced -> choose your iTunes folder location -> check the box that asks if you want to copy files to iTunes folder
