Is this 'manic bitch' the owner or just a middle management 'tard?
If it's the owner - get out quick.
If it's middle management you have the option of going over her head and putting a professional complaint about her in writing. This may or may not work, but you might also end up with the satisfaction of taking her job, her salary and making life better for everyone around you.
Another middle management option is hiding a 'wee baggy of something' in her office and alerting the superiors to the possibility of her having a habit.
