The problem with all inclusives and food is that you end up eating at a buffet 5/6 of every meal. So when you talk to people, they just focus on the a la carte restaurants, and say to take all your meals there.
The thing is, the food for the a la carte restaurants and the food for the buffets usually come from the same kitchens, and/or the same staff. The reason that people hate the buffets is that they go about it all wrong. If you go through the buffet every meal and take a little of this, and a little of that, and come back with 12 different things on your plate, you'll go crazy. Instead, look it over and decide on a meal. Pick an entree and two sides. This will keep you sane.
Getting creative with the buffet will keep you entertained. Ie: grab some bread and head over to the salad bar and make a killer sandwich.
People will also complain that the butter and ketchup are "weird" (they don't serve you heinz), but you'll just have to get over that.
The best bet to ensure the best food is to stay at a 5 star. Don't cheap out, especially if you two are planning on hanging around the resort the whole time.
We just got back from the Gran Sunset Princess in Playa Del Carmen. (http://www.tripadvisor.com/Hote... I'd recommend it, but there are a ton of great places to stay, so you probably can't go wrong in the Play Del Carmen or Cozumel region.
Watch out for the rainy season though. Bad weather will ruin your vacation. Wifey and I spent two weeks in Cuba and it rained on 12 of the days we were there. It really sucks.
