I've been on both sides of this.... as a photog and as an agency hack...
2 possible approaches:
1. find your ideas/mood/demographic/colors/lo... and then find a photographer whose portfolio looks almost exactly like this and hire them, but DON'T change the idea/look much if at all after you hire them. Be prepared for fairly large invoice.
2.Find a smart and versatile photographer who can think on their feet, work with them after you've decided your look/mood/demographic and have some sketches... they may have great ideas to add, but you need to start with clear direction...
NOTE: DO NOT:
1. show istockphoto comps to client, they may expect your photog to duplicate them almost exactly...
2. Hire a photog with style X and then ask for style Y unless you make it clear at the beginning
3. skimp on food on the shoot, this can spoil the mood
