ignore the haters. it's a lovely town albeit a bit too big, making it a pain to go anywhere. studderine has made you a good list. downtown is the place to be on first fridays so if you are in town the first friday in december, be sure to check it out. light rail is far from useless and will get you anywhere in phx/downtown area. although if you stay in glendale, light rail does not go that far.

rent a car and drive to jerome (may be cold there in dec but it's an amazing town in the mountains full of art galleries). stay at the jerome grand hotel for the evening and have dinner at the Asylum. phenomenal food. http://www.azjerome.com
take a trip to Arcosanti - a one of a kind experimental city not too far from phx - http://www.arcosanti.org/

i know a lot of great restaurants. happy to recommend some if you like. tutti santi is my favorite italian restaurant and that's in glendale
