If you're a designer, you shouldn' t feel responsible for the writing on those sites. Even if you did write that material, would you be doing that for him? If not, don't claim that you did it.
Your work is good, but you don't have that many links in there. I'm sure you have more work to show. You don't have to have a ton of work on your site, but be able to tell stories about each project. Sound responsible and share what you've learned from them. Then, let him know that your experience can help his cause.
