The last touchscreen we interface we created we made it the same resolution as the monitor (1368x? or something weird), we then made the website the same proportion, but smaller.
All updates would be done to both and just scaled. Worked wonderfully.
HD as interaction is going to be tough, especially if you are ever going to the web (things will be really tiny, no?)
If there is no interaction, then I'd think about just using video. It should play smoother.
